Season 3 Episode 4

A Discussion with a Yeast Whisperer (Shea Comfort)

Dear Listeners,

You will find this episode less focused, more disjointed, human and as somewhat of a departure from our previous material.

You will also have the privilege of listening to someone whose passion for aroma, flavor and the elements that influence them during fermentation, is truly discombobulating.

it is my hope that a number of future, more focused episodes are born of this one.

DOWNLOAD MASS SPEC DATA HERE

As we mention in this episode; 5 of the 9 mezcal samples labels came off in transit, of the 9 samples the 4 that stayed labeled are:

1) Puya (A. salmiana tehuacanensis from Oaxaca),

2) Sotol (Lamata Sotol from Durango),

3) Verde (Lamata Verde from Durango - A. salmiana ferox),

4) The Lamata Tamaulipas (ensamble of A. univitatta, asperrima and americana).

We know 4 of the 5 unlabeled samples were:

1) (Lamata) Lechuguilla from Sonora (only sample with very citrus heavy aroma),

2) (Lamata) Cenizo from Durango,

3) (Lamata) Castilla from Durango

4) (Lamata) The Ensamble of Madrecuixe, Bicuixe and Espadin from Sosimo Jarquin from Lamata.

* I believe the 5th sample was an Ensamble of Puya, Papalometl and Pichumetl also from the same producers as the pure Puya sample, but I will need to wait until I can taste the samples again to be sure.

If you download the Mass Spec data you will see 4 samples are labeled with corresponding names and 5 are labeled with numbers.
